30-Minute Creamy Lasagna Soup: Easy One-Pot Dinner Recipe

This creamy lasagna soup delivers all the comfort of traditional lasagna without the layering or oven time. Made in one pot with ground beef, broken lasagna noodles, and a rich tomato-cream broth, it’s the perfect weeknight dinner that comes together in just 30 minutes.

  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (28 oz / 800g) crushed tomatoes (San Marzano preferred)
  • 4 cups (950ml) low-sodium chicken broth
  • 1 cup (240ml) heavy cream
  • 8 sheets lasagna noodles, broken into 2-inch pieces
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 cup (120g) shredded mozzarella cheese
  • ½ cup (50g) grated Parmesan cheese
  • Fresh parsley or basil for garnish

Instructions

  1. Brown the Beef: Place a large pot over medium-high heat and add the ground beef. Break it apart with a wooden spoon and let it sear undisturbed for 1-2 minutes before stirring. Cook until browned all over, then transfer to a plate with a slotted spoon, leaving the rendered fat in the pot.
  2. Sauté the Aromatics: Reduce heat to medium. Add diced onion to the pot with a pinch of salt. Cook, stirring occasionally, until soft and translucent (about 4 minutes). Add minced garlic and cook for 30 seconds until fragrant.
  3. Build the Broth: Pour in crushed tomatoes and chicken broth. Scrape up any browned bits from the bottom of the pot. Add dried oregano, dried basil, red pepper flakes (if using), and black pepper. Stir to combine.
  4. Cook the Noodles: Bring broth to a gentle boil. Add broken lasagna noodles and stir to submerge. Reduce heat to a simmer and cook, stirring occasionally, until noodles are tender but still al dente (10-12 minutes).
  5. Add Cream and Cheese: Return browned beef to the pot. Pour in heavy cream and stir until combined. Simmer for 1 minute. Remove from heat and stir in shredded mozzarella and grated Parmesan until melted.
  6. Taste and Adjust: Season with salt as needed. If soup is too thick, add a splash of broth or water. If too thin, simmer uncovered for 5 minutes to reduce.
  7. Serve: Ladle into bowls and top with extra mozzarella, Parmesan, and fresh herbs. Serve immediately.

Notes

For extra depth, stir in 1 tablespoon of tomato paste after cooking the garlic. The soup tastes even better the next day as flavors meld. To freeze, make the broth base without noodles and add fresh noodles when reheating.
