  • 1 (4-5 lb) bone-in, skin-on turkey breast
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1 teaspoon dried thyme
  • 1 cup frozen or fresh cranberries
  • 1/2 cup fresh orange juice (from about 2 large oranges)
  • 1/4 cup packed light brown sugar
  • 2 tablespoons honey
  • 1 tablespoon orange zest
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger

Instructions

  1. Take the turkey breast out of the refrigerator 30 minutes before cooking. Pat the skin and meat completely dry with paper towels.
  2. In a small bowl, mix salt, pepper, and dried thyme. Rub this mixture all over the turkey breast, including under the skin if possible.
  3. In a small saucepan, combine cranberries, orange juice, brown sugar, honey, orange zest, cinnamon, and ginger. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat to a simmer and cook for 10-12 minutes until the mixture reduces by half and becomes syrupy. Remove from heat and let cool for 5 minutes.
  4. Preheat oven to 375°F (190°C). Place a rack in a roasting pan. Drizzle olive oil over the turkey skin and rub to coat. Place the turkey breast on the rack, skin-side up.
  5. Roast for 30 minutes. Do not open the oven door during this time.
  6. After 30 minutes, remove the pan from the oven. Generously brush a thick layer of glaze all over the turkey skin. Return to the oven.
  7. Roast for another 30 minutes, then apply another generous layer of glaze. If the skin is getting too dark, loosely tent the turkey with aluminum foil.
  8. Continue roasting, checking the internal temperature with a meat thermometer after about 1 hour 15 minutes total cooking time. The turkey is done when the thickest part of the breast registers 165°F (74°C). Total roasting time is typically 1 hour 15 minutes to 1 hour 30 minutes.
  9. Remove the turkey from the oven and let it rest on a cutting board for at least 15-20 minutes before slicing. Tent loosely with foil to keep warm.

For best results, use a bone-in, skin-on turkey breast. The glaze can be made up to 3 days in advance and stored in the refrigerator. If the skin browns too quickly, tent with foil. Always rely on a meat thermometer for doneness. Let the turkey rest for at least 15-20 minutes before slicing to keep it juicy.
