  • 3 cups Mini Pretzel Twists
  • 1 ½ cups Candy Corn
  • 1 cup Salted Butter (2 sticks)
  • ¾ cup Light Brown Sugar, packed
  • 3 tablespoons Light Corn Syrup
  • 1 teaspoon Vanilla Extract
  • ½ teaspoon Baking Soda
  • Optional: 1 cup Roasted, Salted Peanuts or Pecans

Instructions

  1. Preheat your oven to 250°F (120°C). Pour the 9 cups of Rice Chex cereal and 3 cups of mini pretzels into your large roasting pan or two 9×13 baking dishes. If you’re using nuts, add them now. Gently toss them together to distribute everything evenly.
  2. In a medium saucepan over medium heat, melt the 1 cup of salted butter. Once melted, add the ¾ cup of packed light brown sugar and 3 tablespoons of light corn syrup. Stir constantly until the mixture comes to a gentle boil. Let it boil for 2 minutes without stirring.
  3. Remove the saucepan from the heat. Carefully stir in the 1 teaspoon of vanilla extract (it will bubble up). Then, add the ½ teaspoon of baking soda and whisk vigorously. The mixture will foam up and become lighter in color.
  4. Immediately pour the hot, foamy coating over the cereal and pretzel mixture in the pan. Use your wooden spoon or silicone spatula to gently fold and toss until every piece is evenly coated.
  5. Place the pan in the preheated oven. Bake for 1 hour, stirring the mix every 15 minutes.
  6. After 1 hour, remove the pan from the oven. Spread the hot mix out onto a large sheet of wax paper or parchment paper in a single layer. Let it cool completely without stirring, at least 30-45 minutes.
  7. Once the mix is completely cool and crunchy, transfer it to a large bowl. Gently stir in the 1 ½ cups of candy corn.
  8. Serve immediately or store in an airtight container.

Don’t skip the baking soda; it makes the coating light and crunchy. Stir every 15 minutes during baking to ensure even baking. Cool completely before storing to maintain crunchiness. Add candy corn only after the mix is completely cool to prevent melting.
