A happy accident turned into a family legend: this pecan pie cobbler delivers all the gooey, nutty flavor of a classic pecan pie without the stress of a crust. It’s a forgiving, flexible dessert that consistently wows.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups light brown sugar, packed
  • 4 large eggs, at room temperature
  • 1 cup light corn syrup
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 2 cups pecan halves
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups whole milk
  • 3 tablespoons unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Make the pecan filling: In a large bowl, whisk together 1 cup melted butter and 2 cups packed brown sugar until smooth. Add eggs one at a time, whisking well after each. Stir in corn syrup, vanilla, and 1/2 teaspoon salt. Fold in pecan halves. Pour into prepared dish.
  3. Make the cobbler batter: In a separate bowl, whisk together flour, granulated sugar, baking powder, and 1/2 teaspoon salt. Add milk and whisk until smooth (a few lumps are fine).
  4. Assemble: Pour batter evenly over the pecan filling. Do not stir. Drizzle 3 tablespoons melted butter over the top.
  5. Bake for 45-55 minutes, until top is deep golden brown and filling is bubbly around edges. If browning too quickly, tent with foil after 35 minutes.
  6. Cool for at least 20-30 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

Don’t overmix the batter; a few lumps are fine. Let the cobbler cool for at least 20-30 minutes to allow the filling to thicken. Toasting the pecans for 3-4 minutes before adding enhances flavor. For a gluten-free version, use a 1:1 gluten-free flour blend.
