A fun and healthy Halloween snack featuring banana ghosts with blueberry eyes and grape stems, perfect for school parties or a festive after-school treat.

  • 45 ripe but firm bananas
  • 1 cup fresh blueberries
  • 1 cup seedless green grapes
  • 1 mandarin orange or clementine (optional)
  • 1 tablespoon lemon juice
  • A handful of mini chocolate chips
  • 12 tablespoons honey or agave (optional)

Instructions

  1. Wash blueberries and grapes thoroughly, then pat dry with paper towels. Peel bananas. If using mandarin orange, peel and separate into segments. Cut grapes in half lengthwise if large.
  2. Fill a small bowl with 1/2 cup cold water and add 1 tablespoon lemon juice. Stir to combine.
  3. Cut each banana into 1-inch thick rounds. Dip each slice in lemon water for about 3 seconds, then set on a paper towel to dry.
  4. Press blueberries into banana slices for eyes. Use a tiny piece of grape or a mini chocolate chip for the mouth.
  5. Place a grape half at the bottom of each banana slice for a ghost dress, or two grape halves on the sides for arms.
  6. For ghost hair, press a green grape with a stem into the top of each banana slice so the stem curls upward. If no stems, use a sliver of green apple peel or cucumber peel.
  7. Arrange assembled ghosts on a white platter in a circle. Fill empty spaces with extra blueberries and grapes. If using mandarin orange segments, arrange in the center. Drizzle with honey if desired.
  8. Serve immediately or cover loosely with plastic wrap and refrigerate for up to 2 hours.

Notes

Use ripe but firm bananas to avoid mushiness. Keep blueberries dry to prevent sliding. Lemon water dip prevents browning for 2-3 hours. Best served within 2 hours of assembly.
