A creamy, cheesy corn casserole with a hint of jalapeno heat and a golden cheddar crust. Perfect for potlucks, holidays, or weeknight dinners.

Ingredients

Scale
  • 15 oz can whole kernel corn, drained
  • 15 oz can creamed corn
  • 1 1/2 cups sharp cheddar cheese, shredded (divided: 1 cup for batter, 1/2 cup for topping)
  • 1/2 cup unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 1 cup milk (whole or 2%)
  • 1/2 cup cornmeal (yellow or white)
  • 2 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 jalapenos, seeded and diced
  • Optional: 2 tablespoons chopped fresh cilantro for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Shred the cheddar cheese; set aside 1/2 cup for topping and reserve 1 cup for the batter.
  3. Cut jalapenos in half lengthwise, remove seeds and membranes, and dice into small pieces.
  4. In a large bowl, whisk together cornmeal, flour, sugar, salt, pepper, and garlic powder until no lumps remain.
  5. Add melted butter, beaten eggs, and milk. Stir until just combined; do not overmix.
  6. Fold in drained whole kernel corn, creamed corn, and 1 cup of shredded cheddar. Stir gently until evenly distributed.
  7. Pour batter into prepared dish and spread evenly.
  8. Sprinkle diced jalapenos evenly over the batter, then top with remaining 1/2 cup shredded cheddar.
  9. Bake for 40-45 minutes, until edges are golden brown and center is set but slightly jiggly. A knife inserted in center should come out clean or with a few moist crumbs.
  10. Let rest for 5-10 minutes before serving. Garnish with cilantro if desired.

Notes

For a less spicy version, use only one jalapeno or substitute with a poblano pepper. For extra heat, leave some seeds in. To make ahead, assemble up to 24 hours in advance and refrigerate; add 10 minutes to baking time. For a gluten-free version, replace all-purpose flour with a 1:1 gluten-free flour blend and ensure cornmeal is certified gluten-free. For a dairy-free version, use melted coconut oil or vegan butter, unsweetened almond or oat milk, and dairy-free cheddar shreds.
