This Crowd-Pleasing Holiday Brie and Cranberry Puff Pastry Board is a stunning, deceptively simple appetizer featuring golden puff pastry bundles filled with gooey brie and tangy-sweet cranberry sauce, perfect for holiday parties and gatherings.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 1 (8-ounce) wheel of brie cheese
  • 1/2 cup high-quality cranberry sauce
  • 1 large egg, beaten with 1 tablespoon water (egg wash)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1–2 sprigs fresh rosemary or thyme
  • Flaky sea salt (like Maldon)
  • Assorted crackers and crostini
  • Fresh fruit (sliced apples, pears, red grapes)
  • Dried fruit (dried figs, apricots, or cherries)
  • Nuts (Marcona almonds or candied pecans)
  • Honey or hot honey (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line your baking sheet with parchment paper.
  2. On a lightly floured surface, gently unfold the thawed puff pastry sheet. Using a sharp knife or pizza cutter, cut the pastry into 9 equal squares. Place the squares on the prepared baking sheet, spacing them about 1-2 inches apart.
  3. Cut the wheel of brie into 9 equal pieces, leaving the rind on. Place one piece of brie in the center of each pastry square. Top each piece of brie with a generous teaspoon of cranberry sauce. If you’re using nuts, sprinkle a few on top of the cranberry sauce.
  4. Gently bring the four corners of each pastry square up to the center, pinching them together to seal.
  5. In a small bowl, whisk the egg with 1 tablespoon of water. Using your pastry brush, gently brush the egg wash over the top and sides of each pastry bundle.
  6. Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the pastry is puffed up and deep golden brown. The brie should be melted and bubbling slightly.
  7. While the bundles are baking, prepare your serving board. Arrange your crackers, fresh fruit, dried fruit, and any other accompaniments.
  8. Once the pastry bundles are out of the oven, let them cool for 2-3 minutes on the baking sheet. Then, using a spatula, carefully transfer them to your prepared board. Garnish with fresh rosemary or thyme sprigs and a sprinkle of flaky sea salt.

Notes

Cold pastry is key for best rise. Don’t overfill bundles to prevent sogginess. Let bundles rest 2-3 minutes after baking to prevent burns. Can be assembled up to 24 hours in advance and baked just before serving. For air fryer: cook at 375°F (190°C) for 10-12 minutes.
