Ingredients

Scale
  • 12 large eggs (hard-boiled and peeled)
  • 1/3 cup mayonnaise (Hellmann’s or Duke’s preferred)
  • 2 tablespoons cream cheese (softened to room temperature)
  • 1 tablespoon Dijon mustard (yellow mustard works in a pinch)
  • 1 tablespoon everything bagel seasoning (plus more for garnish)
  • 4 slices bacon (cooked until crispy and crumbled)
  • 1 teaspoon white vinegar (or apple cider vinegar)
  • Salt and black pepper (to taste)
  • Fresh chives (optional, for garnish)

Instructions

  1. Hard-boil the eggs: Place 12 eggs in a large pot and cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, cover the pot, turn off the heat, and let sit for exactly 12 minutes. Prepare a bowl of ice water.
  2. Cool and peel the eggs: After 12 minutes, transfer eggs to the ice water bath using a slotted spoon. Let chill for at least 5 minutes. Gently tap each egg on the counter and roll to crack the shell all over. Peel under running cold water.
  3. Cook the bacon: While eggs cool, cook 4 slices of bacon until crispy. Bake on a foil-lined sheet at 400°F for 12-15 minutes, or fry in a skillet over medium heat for 6-8 minutes. Transfer to a paper towel-lined plate to drain and cool. Crumble into small pieces.
  4. Prepare the eggs: Using a sharp knife, slice each hard-boiled egg in half lengthwise. Carefully pop the yolks out into a medium mixing bowl. Arrange the egg white halves on a serving platter.
  5. Make the filling: To the bowl with yolks, add 1/3 cup mayonnaise, 2 tablespoons softened cream cheese, 1 tablespoon Dijon mustard, 1 tablespoon everything bagel seasoning, and 1 teaspoon white vinegar. Mash together with a fork until smooth and creamy. Season with a pinch of salt and a few cracks of black pepper. Taste and adjust as needed.
  6. Fill the eggs: Spoon the yolk mixture into a piping bag or a zip-top bag with the corner snipped off. Pipe the filling into each egg white half, dividing evenly. Pile it up high.
  7. Top and garnish: Sprinkle crumbled bacon evenly over the filled eggs. Finish with a light dusting of extra everything bagel seasoning and chopped fresh chives if desired. Serve immediately or refrigerate until ready.

Notes

For best texture, ensure cream cheese is at room temperature to avoid lumps. Older eggs peel more easily than fresh ones. If making ahead, prepare filling and egg whites separately up to 24 hours in advance, then assemble just before serving. Add bacon and seasoning right before serving to keep bacon crunchy. If filling is too stiff, add a teaspoon of milk or extra mayonnaise to loosen it.
