This one-bowl banana nut bread is the recipe you didn’t know you needed until you try it. It’s simple enough for a lazy Sunday morning but impressive enough to bring to a holiday gathering.

Ingredients

Scale
  • 3 large ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Grease your 9×5-inch loaf pan with butter or non-stick spray. If using parchment paper, cut a strip that hangs over the two long sides of the pan.
  2. Mash the bananas in your large mixing bowl with a fork until mostly smooth with a few small lumps remaining. The bananas should measure about 1 1/2 cups when mashed.
  3. Add the melted butter and both sugars to the mashed bananas. Stir with a whisk or fork until well combined.
  4. Add the eggs and vanilla extract. Crack the eggs into the bowl one at a time, stirring well after each addition. Pour in the vanilla and stir until smooth and glossy.
  5. Sprinkle the flour, baking soda, salt, and cinnamon over the wet mixture. Stir gently with a rubber spatula or wooden spoon until just combined. A few streaks of flour should remain.
  6. Fold in the chopped walnuts, reserving about 2 tablespoons for the top if desired. Gently fold with just a few strokes.
  7. Pour the batter into the prepared loaf pan. Spread evenly and smooth the top. If reserved, sprinkle walnuts on top and gently press them into the batter.
  8. Bake for 55-65 minutes. Start checking at the 50-minute mark. The bread is done when a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with aluminum foil.
  9. Cool in the pan for 10 minutes. Then turn the bread out onto a cooling rack. Let cool completely before slicing.

Notes

For best results, use very ripe bananas with brown spots. Toast walnuts before adding for deeper flavor. Do not overmix the batter. Let bread cool completely before slicing for cleaner slices.
