Ingredients

Scale
  • 2 tablespoons brown sugar (packed)
  • 1 tablespoon unsalted butter
  • 1 ½ ounces dark rum (about 3 tablespoons)
  • ¾ cup hot water
  • ¼ teaspoon vanilla extract
  • Pinch of ground cinnamon (about ⅛ teaspoon)
  • Pinch of ground nutmeg
  • Tiny pinch of salt
  • Cinnamon stick (optional, for garnish)
  • Freshly grated nutmeg (optional, for garnish)
  • Whipped cream (optional, for garnish)
  • Star anise (optional, for garnish)

Instructions

  1. Cream the butter and brown sugar together in a small bowl or directly in your mug until smooth and sandy.
  2. Add the cinnamon, nutmeg, salt, and vanilla extract. Stir to form a thick, fragrant paste.
  3. Pour in the dark rum and stir to combine.
  4. Add hot water (not boiling) and stir until fully dissolved and combined, about 15 seconds.
  5. Taste and adjust sweetness or spice as desired.
  6. Garnish with cinnamon stick, fresh nutmeg, or whipped cream if desired. Serve immediately.

Notes

Don’t boil the water; use hot but not boiling water to prevent butter separation. Room temperature butter creams better. The butter-sugar paste can be made ahead and stored in the refrigerator for up to a week. For a non-alcoholic version, replace rum with strong chai tea or rum extract mixed with water.
