A quick and easy 15-minute salad featuring sweet citrus, tart pomegranate, creamy avocado, and a tangy honey-lime dressing. Perfect for winter when citrus is at its peak.

Ingredients

Scale
  • 5 cups (150g) mixed greens (arugula and baby spinach)
  • 3 medium oranges (Navel or Cara Cara)
  • 1 cup (150g) pomegranate seeds
  • 1 large avocado, ripe but firm
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup feta cheese, crumbled (optional)
  • 3 tablespoons (45ml) extra virgin olive oil
  • 2 tablespoons (30ml) fresh lime juice
  • 1 tablespoon (15ml) honey
  • Salt and pepper to taste

Instructions

  1. Make the dressing: In a small bowl or jar, combine 3 tablespoons olive oil, 2 tablespoons fresh lime juice, and 1 tablespoon honey. Add a pinch of salt and a few grinds of black pepper. Whisk or shake until well combined. Taste and adjust sweetness or tanginess as desired. Set aside.
  2. Prepare the citrus: Using a sharp knife, cut off the top and bottom of each orange so it sits flat. Slice off the peel and white pith, following the curve of the fruit. Slice the orange into 1/4-inch rounds or cut between the membranes to create supremes.
  3. Prep the pomegranate: If using a whole pomegranate, cut it in half crosswise. Hold one half cut-side down over a bowl and whack the back with a wooden spoon to release the seeds. Remove any white pith. Measure out 1 cup.
  4. Slice the avocado: Cut the avocado in half lengthwise, remove the pit, and score the flesh in a grid pattern. Scoop out the cubes with a spoon.
  5. Thinly slice the red onion: Cut the onion in half, then slice as thinly as possible. For a milder flavor, soak slices in cold water for 5-10 minutes, then drain and pat dry.
  6. Chop the herbs: Rinse mint and parsley, pat dry, and chop roughly.
  7. Assemble the salad: In a large bowl, add the mixed greens. Top with orange slices, pomegranate seeds, avocado cubes, red onion slices, and fresh herbs. Drizzle about half the dressing over the top.
  8. Toss and serve: Gently toss everything together (use your hands to avoid crushing avocado). Add more dressing if needed. Sprinkle crumbled feta on top if using. Serve immediately.

Notes

For best results, use room temperature ingredients. Dress the salad right before serving to prevent wilting. Toasted pistachios or almonds add a nice crunch. For a vegan version, substitute honey with maple syrup or agave.
