Ingredients

Scale
  • 1 ½ cups (190g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) champagne or sparkling wine
  • ⅓ cup (80ml) whole milk, room temperature
  • ¾ cup (120g) fresh strawberries, finely chopped
  • ½ cup (80g) fresh or frozen strawberries (for reduction)
  • 2 tablespoons granulated sugar (for reduction)
  • 1 tablespoon lemon juice (for reduction)
  • 1 cup (226g) unsalted butter, softened (for frosting)
  • 3 to 4 cups (360g to 480g) powdered sugar (for frosting)
  • 3 tablespoons champagne or sparkling wine (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • 2 to 3 tablespoons strawberry reduction (for frosting)
  • Fresh strawberry slices (for garnish, optional)
  • Edible glitter or sprinkles (for garnish, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. Make the strawberry reduction: In a small saucepan, combine ½ cup strawberries, 2 tablespoons sugar, and 1 tablespoon lemon juice. Cook over medium heat, stirring occasionally, for 8-10 minutes until berries break down and mixture thickens. Strain through a fine-mesh strainer into a small bowl, pressing on solids. Set aside to cool completely.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, beat softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes. Scrape down sides as needed.
  5. Add eggs one at a time, beating well after each. Mix in vanilla extract.
  6. With mixer on low, add one-third of the flour mixture, then half of the combined champagne and milk. Repeat, ending with flour. Mix just until combined; finish by hand with a spatula if needed.
  7. Gently fold in chopped strawberries with a rubber spatula until evenly distributed.
  8. Divide batter evenly among the 12 liners, filling each about two-thirds full.
  9. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Rotate pan halfway through.
  10. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  11. Make the frosting: In a large bowl, beat softened butter on medium speed until smooth and creamy, about 2 minutes. Gradually add powdered sugar, one cup at a time, beating on low. Add reduced champagne, vanilla extract, and a pinch of salt. Beat on medium-high for 3-4 minutes until light and fluffy. Beat in 2-3 tablespoons of cooled strawberry reduction.
  12. Once cupcakes are completely cool, pipe or spread frosting onto each. Garnish with fresh strawberry slices or edible glitter if desired.

Notes

Use a budget-friendly sparkling wine or non-alcoholic sparkling cider. Room temperature ingredients are crucial for best texture. Do not overmix the batter. Pat strawberries dry after chopping to avoid soggy cupcakes. Frosting can be chilled if too thin. Cupcakes taste even better the next day.
