A refreshing and quick cucumber tomato feta salad with a tangy homemade dressing, perfect for summer barbecues and picnics.

  • 2 large English cucumbers, unpeeled and diced
  • 2 cups cherry or grape tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1 cup feta cheese, crumbled (from a block in brine)
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Optional: a handful of fresh parsley or mint, chopped

Instructions

  1. Wash and dry the cucumbers, tomatoes, and herbs. Pat them dry with a clean kitchen towel or use a salad spinner.
  2. Dice the cucumbers: trim ends, cut lengthwise into quarters, then slice into 1/2-inch chunks.
  3. Halve the tomatoes: if using cherry or grape tomatoes, slice in half; for larger tomatoes, dice into 1-inch chunks.
  4. Slice the red onion: cut in half through the root, peel, and slice into thin half-moons (about 1/8-inch thick). For milder flavor, soak slices in cold water for 10 minutes, then drain and pat dry.
  5. Make the dressing: in a small bowl or measuring cup, whisk together olive oil, red wine vinegar, dried oregano, and a pinch of salt and pepper until emulsified.
  6. Assemble the salad: place cucumbers, tomatoes, and red onion in a large mixing bowl. Pour dressing over and toss gently to coat.
  7. Add feta: gently fold in crumbled feta, reserving a little for garnish. If using fresh herbs, add them now and toss once more.
  8. Let rest (optional but recommended): let the salad sit at room temperature for 10-15 minutes before serving for best flavor.
  9. Taste and adjust seasoning if needed. Sprinkle reserved feta on top and serve.

Notes

For best results, use a block of feta in brine instead of pre-crumbled. Pat vegetables dry to prevent watery salad. Let salad sit for 10-15 minutes before serving to meld flavors. Store leftovers in an airtight container in the refrigerator for up to 2 days.
