This cozy 30-minute cheesy taco soup is a warm hug in a bowl, recreating a beloved diner memory with a creamy, cheesy broth, tender beans, and perfectly seasoned beef. It’s a quick and easy one-pot dinner perfect for busy weeknights.

Ingredients

Scale
  • 1 lb ground beef (or ground turkey for a leaner option)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 packet (1 oz) taco seasoning (I prefer McCormick or homemade—see note below)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 can (15 oz) diced tomatoes with green chilies (like Rotel), undrained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained (or 1 1/2 cups frozen corn)
  • 4 cups low-sodium beef broth (or chicken broth)
  • 8 oz cream cheese, softened and cut into cubes
  • 2 cups shredded sharp cheddar cheese (adds richness)
  • 1/2 cup heavy cream (or half-and-half for a lighter version)
  • Fresh cilantro, chopped (for topping)
  • Sour cream (for topping)
  • Crushed tortilla chips (for topping)
  • Diced avocado (for topping)
  • Sliced jalapeños (for topping)

Instructions

  1. Heat the olive oil in your large pot over medium-high heat. Add the ground beef and diced onion. Cook, breaking the meat apart with your spoon, until the beef is browned and the onion is translucent—about 5 minutes. Drain any excess fat if needed (I usually leave a tablespoon for flavor).
  2. Add the minced garlic, taco seasoning, chili powder, cumin, and smoked paprika. Stir constantly for about 30-60 seconds until the kitchen smells incredible.
  3. Pour in the diced tomatoes with green chilies (undrained), drained black beans, drained kidney beans, drained corn, and beef broth. Stir everything together, scraping up any browned bits from the bottom of the pot.
  4. Bring the soup to a boil, then reduce the heat to medium-low. Let it simmer uncovered for about 15 minutes, stirring occasionally.
  5. Reduce the heat to low. Add the cubed cream cheese and stir until it’s completely melted into the soup, about 2-3 minutes.
  6. Gradually add the shredded cheddar cheese, a handful at a time, stirring constantly until each addition is melted before adding the next. Then pour in the heavy cream and stir until everything is smooth and velvety. Taste and adjust salt and pepper.
  7. Ladle the soup into bowls and top with your favorite toppings. Serve immediately.

Notes

For the best texture, use block cheddar and shred it yourself—pre-shredded cheese has anti-caking agents that can make the soup grainy. Use room temperature cream cheese for easier melting. The soup thickens as it cools, so serve it a little thinner than you think. Leftovers taste even better the next day. For a dairy-free version, use plant-based cream cheese, vegan cheddar shreds, and coconut cream.
