This quick and easy baked buffalo chicken dip is the ultimate crowd-pleaser, made with tender rotisserie chicken, creamy cheese, and tangy buffalo sauce. Ready in under 30 minutes, it’s perfect for game day or any cozy gathering.

Ingredients

Scale
  • 3 cups cooked chicken, shredded (from a rotisserie chicken)
  • 8 oz cream cheese, softened
  • 1/2 cup ranch dressing
  • 1/2 cup hot sauce (Frank’s RedHot Original recommended)
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese
  • 3–4 green onions, sliced (white and green parts separated)
  • 1/4 cup crumbled blue cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Shred the chicken and place in a large mixing bowl.
  2. Add softened cream cheese to the hot shredded chicken and roughly combine with a fork.
  3. Pour in ranch dressing and hot sauce. Beat with a hand mixer or sturdy spoon until smooth and uniform.
  4. Fold in 1 cup cheddar, all Monterey Jack, and the white parts of the green onions until evenly distributed.
  5. Scrape mixture into a 9×13-inch baking dish or 10-inch cast iron skillet. Spread into an even layer. Sprinkle remaining 1/2 cup cheddar on top.
  6. Bake for 15-20 minutes, until hot and bubbly and the top cheese is melted and lightly golden.
  7. Let cool for 2-3 minutes. Garnish with green onion tops and optional crumbled blue cheese. Serve immediately.

Notes

For a smoother dip, beat cream cheese with a mixer. Avoid over-baking to prevent greasiness. Can be assembled ahead and refrigerated for up to 24 hours; add 5-10 minutes to baking time. For a slow cooker version, combine all ingredients and cook on low for 2 hours.
