This cozy champurrado Mexican hot chocolate is a thick, velvety drink made with masa harina, Mexican chocolate, and cinnamon. It’s the perfect warming treat for cold weather, ready in about 25 minutes with simple ingredients.

Ingredients

Scale
  • 4 cups whole milk
  • 1/3 cup masa harina
  • 2 disks (about 3 ounces total) Mexican chocolate, chopped
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup piloncillo or dark brown sugar, packed
  • 1 cinnamon stick
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: pinch of ground anise or star anise

Instructions

  1. Bloom the masa harina: In a small bowl, whisk together the masa harina and 1 cup of the milk until smooth. Let it sit for 5 minutes.
  2. Heat the base: In a medium saucepan, combine the remaining 3 cups of milk, the cinnamon stick, and the salt. Warm over medium heat until small bubbles form around the edges, about 4 minutes. Do not let it boil.
  3. Add the chocolate and sugar: Drop in the chopped Mexican chocolate, cocoa powder, and piloncillo or brown sugar. Whisk gently until everything is melted and smooth, about 2-3 minutes.
  4. Incorporate the masa slurry: Remove the cinnamon stick. Slowly pour the masa harina mixture into the pot while whisking constantly.
  5. Thicken and simmer: Continue cooking over medium-low heat, whisking frequently, for about 8-10 minutes until the mixture thickens and coats the back of a spoon.
  6. Finish with vanilla: Remove the pot from the heat. Stir in the vanilla extract and optional pinch of ground anise if using.
  7. Serve immediately: Pour into warmed mugs and enjoy right away.

Notes

For best results, use whole milk and Maseca brand masa harina. Mexican chocolate has a slightly gritty texture from sugar crystals—that’s normal. If the champurrado gets too thick, add a splash of warm milk and whisk. Leftovers can be refrigerated for up to 3 days and reheated on the stovetop with a splash of milk.
