  • 1 cup water

  • 1/2 teaspoon almond extract
  • 1/4 teaspoon butter extract (optional)
  • 1 cinnamon stick (optional, for simmering)
  • 1/2 teaspoon ground nutmeg (optional)
  • Pinch of salt

Instructions

  1. Combine sugar and water in a medium saucepan. Stir to start dissolving the sugar.
  2. Add the butter and any optional whole spices (cinnamon stick or star anise).
  3. Bring to a gentle simmer over medium heat (about 3-4 minutes). Stir occasionally.
  4. Simmer for 5 minutes, stirring every minute. Do not let it boil.
  5. Remove from heat and let cool for about 30 seconds.
  6. Stir in vanilla extract, almond extract, butter extract (if using), and a pinch of salt.
  7. If using whole spices, strain the syrup through a fine-mesh strainer into a glass jar.
  8. Let the syrup cool completely to room temperature (about 20-30 minutes) before sealing.
  9. Refrigerate. Syrup will thicken slightly as it cools. Keeps for up to 3 weeks.

Notes

Don’t boil the syrup—a gentle simmer is key. Add extracts off the heat to preserve flavor. For a thicker syrup, simmer an extra 2-3 minutes. The syrup will thicken as it cools. Double the batch for gifts or longer use. To prevent crystallization, wipe down the sides of the pan with a wet pastry brush before simmering.
