These quick and easy puff pastry bites combine creamy brie, tart cranberries, and flaky pastry for a warm, comforting appetizer that comes together in just 20 minutes. Perfect for last-minute hosting or cozy evenings.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 4 oz brie cheese, rind removed and cut into small cubes
  • 1/2 cup fresh or frozen cranberries
  • 2 tablespoons honey
  • 1 tablespoon orange zest
  • 1 tablespoon fresh orange juice
  • 1/4 teaspoon cinnamon
  • 1 egg, beaten
  • Flaky sea salt, for sprinkling (optional)
  • Fresh rosemary, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Make the cranberry mixture: In a small bowl, combine the cranberries, honey, orange zest, orange juice, and cinnamon. Stir together. If using fresh cranberries, give them a rough chop first. For frozen ones, let them sit in the mixture for a few minutes to soften.
  3. Prepare the puff pastry: On a lightly floured surface, unfold the thawed puff pastry sheet. Gently roll it out to a 10×10 inch square. Cut the pastry into 9 equal squares (about 3×3 inches each).
  4. Assemble the bites: Place a spoonful of the cranberry mixture in the center of each pastry square. Top with a cube of brie.
  5. Fold the pastry: Bring the four corners of each square up to the center, pinching them together to seal. Create little parcels, ensuring the seams are pinched closed.
  6. Apply the egg wash: Brush each pastry parcel with the beaten egg. Sprinkle a little flaky sea salt on top if using.
  7. Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the pastry is puffed up and golden brown. The brie should be melted and bubbly, and the cranberries soft and jammy.
  8. Cool and garnish: Let the bites cool on the baking sheet for about 5 minutes. Sprinkle with fresh rosemary if using. Serve warm.

Notes

For best results, serve warm. If making ahead, reheat in a 350°F oven for 5 minutes. Avoid microwaving to prevent soggy pastry. For a gluten-free version, use gluten-free puff pastry. For a vegan version, use vegan puff pastry and plant-based brie.
