These tender, flaky scones are bursting with tart cranberries and bright orange zest, all topped with a glossy vanilla bean glaze. They’re the perfect cozy treat for a chilly morning with a hot cup of coffee or tea.

Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1/3 cup (65g) granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (113g) cold unsalted butter, cubed
  • 1/2 cup (120ml) cold heavy cream, plus extra for brushing
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of 1 large orange (about 1 tablespoon)
  • 1 cup (120g) dried cranberries
  • 1 cup (120g) powdered sugar, sifted
  • 2–3 tablespoons heavy cream or milk
  • 1 vanilla bean

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper. Place cubed butter in the freezer for 10 minutes.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add cold, cubed butter to the flour mixture. Using a pastry cutter or two forks, cut the butter into the flour until the mixture resembles coarse meal with some pea-sized butter pieces remaining.
  4. In a separate small bowl, whisk together heavy cream, egg, vanilla extract, and orange zest until combined.
  5. Make a well in the center of the dry ingredients. Pour the wet mixture into the well and add the dried cranberries. Gently mix until just combined; the dough will be shaggy and slightly dry.
  6. Turn the dough out onto a lightly floured surface. Gently bring it together into a ball, then pat into a 3/4-inch thick circle, about 8 inches in diameter. Cut into 8 equal wedges. Place wedges on the prepared baking sheet, spacing them about 2 inches apart.
  7. Refrigerate the baking sheet with the scones for at least 15 minutes. While they chill, brush the tops with a little extra heavy cream.
  8. Bake for 14-18 minutes, until bottoms are golden brown and tops are lightly browned. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. While scones cool, make the glaze: In a small bowl, sift the powdered sugar. Split the vanilla bean lengthwise and scrape the seeds into the sugar. Add 2 tablespoons of heavy cream and whisk until smooth. Add more cream if needed to reach desired consistency.
  10. Once scones are completely cool, drizzle the glaze over the tops. Let set for about 10 minutes before serving.

Notes

Keep all ingredients cold for best results. Do not overmix the dough. Chilling the shaped scones before baking is essential for tall, flaky scones. For a dairy-free version, use vegan butter and full-fat canned coconut cream. For a gluten-free version, use a 1:1 gluten-free baking flour blend.
