A quick and easy green bean casserole with a double-crunch of fried shallots, creamy mushroom sauce, and optional cheddar cheese. Perfect for potlucks, holidays, or a cozy weeknight side dish.

Ingredients

Scale
  • 1.5 pounds (about 6 cups) fresh or frozen green beans, trimmed and halved
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • ½ cup whole milk or half-and-half
  • 1 tablespoon soy sauce
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • 1½ cups fried shallots, divided
  • ½ cup shredded cheddar cheese (optional)
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 350°F (175°C). Position rack in the middle.
  2. If using frozen green beans, let them thaw slightly (about 10 minutes). If using fresh, bring a large pot of salted water to a boil, add beans, and cook for exactly 3 minutes. Drain and plunge into ice water to stop cooking. Drain well and pat dry.
  3. In a large mixing bowl, combine cream of mushroom soup, milk, soy sauce, black pepper, and garlic powder. Whisk until smooth.
  4. Add the prepared green beans and 1 cup of the fried shallots to the bowl. Toss gently until beans are evenly coated.
  5. Transfer mixture to a greased 9×13-inch baking dish. Spread evenly without pressing down.
  6. If using, sprinkle shredded cheddar cheese evenly over the top.
  7. In a small bowl, combine the remaining ½ cup fried shallots with melted butter. Toss to coat and sprinkle over the casserole.
  8. Cover the dish with aluminum foil and bake for 20 minutes.
  9. Remove foil and bake for another 10–15 minutes, until top is golden brown and casserole is bubbly at the edges.
  10. Let rest for 5 minutes before serving.

Notes

For a gluten-free version, use gluten-free cream of mushroom soup and gluten-free fried shallots. To make ahead, assemble up to step 7, cover, and refrigerate for up to 24 hours; add 10 minutes to covered baking time. Leftovers keep in the fridge for up to 4 days. Reheat in a 350°F oven for 10–15 minutes.
