  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 3 pounds russet potatoes, peeled and diced into ½-inch cubes (about 6 medium potatoes)
  • 4 cups low-sodium chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional)
  • 8 ounces cream cheese, softened and cubed
  • 1 cup sharp cheddar cheese, shredded
  • ½ cup heavy cream
  • 2 tablespoons unsalted butter
  • For topping: extra shredded cheddar cheese, crumbled bacon, sliced green onions, sour cream (optional)

Instructions

  1. Cook the bacon: In a large skillet over medium heat, cook chopped bacon until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate with a slotted spoon. Reserve 2 tablespoons bacon grease in the skillet.
  2. Sauté the aromatics: Add diced onion to the bacon grease and cook 3-4 minutes until translucent. Add minced garlic and cook 30 seconds more until fragrant.
  3. Combine in slow cooker: Transfer onion and garlic to a 6-quart slow cooker. Add diced potatoes, chicken broth, salt, pepper, and smoked paprika. Stir to combine.
  4. Cook on low: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until potatoes are fork-tender.
  5. Add cream cheese: Add cubed cream cheese and stir until fully melted and incorporated, about 2-3 minutes.
  6. Blend for creaminess: Using an immersion blender, blend about half the soup in the pot, leaving some chunky potato pieces. Alternatively, carefully transfer 3 cups of soup to a blender, blend until smooth, and return to the pot.
  7. Finish with cheese and cream: Stir in shredded cheddar cheese, heavy cream, and butter until melted and combined. Taste and adjust seasoning. Cook on low for another 10-15 minutes.
  8. Serve and garnish: Ladle into bowls and top with extra cheddar, crumbled bacon, green onions, and sour cream. Serve hot.

Notes

Soup thickens as it sits; add a splash of broth or milk when reheating. For best texture, don’t skip the blending step. Use room temperature cream cheese to avoid lumps. Season in layers—add half the salt at the beginning and adjust at the end. This soup tastes even better the next day.
