This creamy, comforting crockpot potato soup is loaded with crispy bacon and fresh chives. It’s easy to make, budget-friendly, and perfect for busy weeknights or lazy Sundays.

  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 3 pounds Russet potatoes, peeled and diced into ½-inch cubes
  • 4 cups low-sodium chicken broth
  • 1 cup whole milk
  • ¼ cup all-purpose flour
  • 2 tablespoons butter
  • Salt and black pepper to taste
  • ¼ cup fresh chives, chopped
  • Optional toppings: shredded cheddar cheese, sour cream, extra crispy bacon bits

Instructions

  1. Cook the bacon: Place chopped bacon in a cold skillet. Turn heat to medium and cook, stirring occasionally, until crispy, about 8-10 minutes. Transfer bacon to a paper towel-lined plate. Leave about 2 tablespoons of bacon fat in the skillet.
  2. Sauté the aromatics: Add diced onion to the skillet with reserved bacon fat. Cook over medium heat until soft and translucent, about 5 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Combine in the crockpot: Transfer sautéed onions and garlic to the slow cooker. Add diced potatoes and pour in chicken broth. Stir to combine.
  4. Slow cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are fork-tender.
  5. Make the roux: About 30 minutes before serving, melt butter in the same skillet. Whisk in flour and cook for 1-2 minutes, stirring constantly. Slowly whisk in milk until smooth and thick. Let simmer for 1-2 minutes.
  6. Thicken the soup: Pour milk mixture into the crockpot and stir well. Use a potato masher to gently mash about half the potatoes in the pot. Stir in cooked bacon, reserving some for garnish.
  7. Season and finish: Taste and add salt and pepper. Let soup cook for another 15-20 minutes on low to meld flavors.
  8. Serve: Ladle soup into bowls. Top with reserved bacon, fresh chives, and any other desired toppings. Serve hot.

Notes

For a vegetarian version, skip the bacon and use vegetable broth. Sauté onions in 2 tablespoons of butter instead of bacon fat, and add 1 teaspoon of smoked paprika for smoky flavor. To prevent curdling, add milk mixture on low heat and let milk come to room temperature first. Soup can be stored in the refrigerator for 4-5 days or frozen for up to 3 months.
