These soft, cakey red velvet cookies are studded with creamy white chocolate chips and topped with sparkling green sugar for a festive holiday treat. A hint of peppermint adds a cozy, nostalgic flavor that will make even the grumpiest heart grow three sizes.

Ingredients

Scale
  • 2 ¼ cups (280g) all-purpose flour
  • 1 tablespoon (5g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (1 stick, 113g) unsalted butter, softened to room temperature
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ¼ teaspoon peppermint extract
  • 1 tablespoon red gel food coloring (or enough to reach desired shade)
  • 1 cup (180g) white chocolate chips
  • 2–3 tablespoons green sanding sugar or coarse sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, whisk together 2 ¼ cups all-purpose flour, 1 tablespoon cocoa powder, 1 teaspoon baking soda, and ½ teaspoon salt. Set aside.
  3. In a medium bowl, beat ½ cup softened butter with ¾ cup granulated sugar and ¼ cup packed brown sugar until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl halfway through.
  4. Beat in 1 large egg, 1 teaspoon vanilla extract, and ¼ teaspoon peppermint extract until combined.
  5. Pour in 1 tablespoon of red gel food coloring and mix until the dough is evenly red. Add a few more drops if needed.
  6. Gradually add the flour mixture to the wet mixture, mixing on low speed or stirring with a spatula until just combined. Do not overmix.
  7. Gently fold in 1 cup of white chocolate chips with a spatula until evenly distributed.
  8. Use a 1.5-tablespoon cookie scoop to portion out the dough. Roll each portion into a ball with your hands. Place the dough balls about 2 inches apart on the prepared baking sheets.
  9. Sprinkle a generous pinch of green sanding sugar over each dough ball. Do not press it in.
  10. Bake one sheet at a time for 10-12 minutes. The cookies should look set around the edges but still soft and slightly underdone in the center.
  11. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  12. Repeat with remaining dough, letting the baking sheets cool completely between batches.

Notes

For best results, use room temperature ingredients. Gel food coloring is preferred over liquid to avoid adding extra moisture. Underbake slightly for a soft, chewy center. Cookies can be stored in an airtight container at room temperature for up to 5 days, or frozen for up to 3 months. The dough can also be frozen for up to 3 months.
