These soft, chewy breakfast cookies are packed with fiber, naturally sweetened with bananas and a touch of honey, and come together in under 20 minutes. Perfect for busy mornings or a guilt-free treat.

Ingredients

Scale
  • 2 cups (180g) rolled oats
  • 1/4 cup (30g) ground flaxseed
  • 2 medium very ripe bananas (about 1 cup mashed / 240g)
  • 1/3 cup (80g) creamy peanut butter
  • 2 tablespoons (30ml) honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: 1/4 cup (30g) chopped dark chocolate, dried cranberries, or chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, mash the two ripe bananas with a fork until mostly smooth with a few small lumps.
  3. Add the peanut butter, honey (or maple syrup), and vanilla extract to the mashed bananas. Stir until well combined.
  4. In a separate small bowl, whisk together the rolled oats, ground flaxseed, cinnamon, baking soda, and salt.
  5. Pour the dry ingredients into the wet mixture. Stir with a spatula until just combined. Fold in any optional mix-ins.
  6. Let the dough rest for 5 minutes to allow the oats and flaxseed to absorb moisture.
  7. Using a cookie scoop or two spoons, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Gently press down on each cookie with the back of a spoon or your fingers to flatten slightly.
  9. Bake for 10-12 minutes, until the edges are lightly golden and the tops look set.
  10. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

For best results, use very ripe bananas with brown spots. Let the dough rest for 5 minutes to improve texture. Store cookies in an airtight container with a slice of apple or bread to keep them moist. Cookies can be frozen for up to 3 months.
