  • 2 tablespoons (25g) granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup (240ml) buttermilk
  • ½ cup (120g) pumpkin puree
  • 1 large egg
  • 2 tablespoons (28g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • ¼ cup (45g) mini chocolate chips
  • Whipped cream or Greek yogurt (for serving)
  • Maple syrup (for serving)

Instructions

  1. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
  2. In a separate medium bowl, whisk together buttermilk, pumpkin puree, egg, melted butter, and vanilla extract until smooth.
  3. Pour wet ingredients into dry ingredients and stir gently until just combined (a few lumps are fine). Let batter rest for 5 minutes.
  4. Heat a non-stick skillet or griddle over medium heat. Add a small pat of butter or oil.
  5. Place a round cookie cutter (3-4 inches) in the pan. Pour about ¼ cup batter into the cutter, filling halfway. Spread evenly with a spoon.
  6. Cook for 2-3 minutes until bubbles form on the surface and edges look set. Carefully lift the cookie cutter straight up.
  7. Flip the pancake and cook for another 1-2 minutes until golden brown and springy to the touch. Repeat with remaining batter.
  8. While pancakes are still warm, press mini chocolate chips into the top to create a jack-o-lantern face (two triangles for eyes, one for nose, curved smile).
  9. Serve warm, stacked, with a dollop of whipped cream or Greek yogurt on top for a ‘stem’ and drizzle with warm maple syrup.

Notes

For best results, do not overmix the batter. Use fresh baking powder. If you don’t have buttermilk, add 1 tablespoon lemon juice or vinegar to regular milk and let sit for 5 minutes. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use almond or oat milk with apple cider vinegar and coconut oil. Freeze plain pancakes and add chocolate chip faces after reheating.
