A bright and comforting chicken noodle soup with lemon and dill, born from a happy accident. This easy recipe comes together in about 45 minutes with simple ingredients, perfect for cold season or any day you need a warm hug in a bowl.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 3 medium carrots, peeled and sliced into rounds (about 1 cup)
  • 3 celery stalks, sliced (about 1 cup)
  • 3 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 2 cups water
  • 1 ½ pounds boneless, skinless chicken breasts or thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh dill, chopped
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 8 ounces wide egg noodles
  • Fresh dill sprigs (for garnish)
  • Lemon slices (for garnish)
  • Freshly cracked black pepper (for garnish)
  • Grated Parmesan cheese (optional, for garnish)

Instructions

  1. Sauté the aromatics: Heat olive oil in a Dutch oven over medium heat. Add diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until onions are translucent and vegetables start to soften. Add minced garlic and cook for 1 more minute until fragrant.
  2. Build the broth: Pour in chicken broth and water. Add salt and pepper. Stir, scraping up any browned bits from the bottom. Increase heat to high and bring to a boil.
  3. Cook the chicken: Once boiling, add chicken breasts or thighs. Reduce heat to medium-low to maintain a gentle simmer. Cover and cook for 15-20 minutes, until chicken is cooked through (internal temperature 165°F).
  4. Remove and shred the chicken: Use a slotted spoon to transfer cooked chicken to a cutting board. Let cool slightly, then shred with two forks into bite-sized pieces.
  5. Cook the noodles: Bring broth back to a gentle boil. Add egg noodles and cook according to package directions (usually 6-8 minutes), stirring occasionally.
  6. Add the lemon and dill: Once noodles are tender, reduce heat to low. Stir in shredded chicken, fresh dill, lemon juice, and lemon zest. Taste and adjust seasoning as needed.
  7. Let it rest: Turn off heat and let soup sit for 5-10 minutes before serving to allow flavors to meld.
  8. Serve and garnish: Ladle soup into bowls. Top with fresh dill sprigs, lemon slices, black pepper, and optional Parmesan cheese.

Notes

For meal prep, store noodles separately from broth to prevent mushiness. Add a splash of broth or water when reheating leftovers. The soup freezes well without noodles for up to 3 months. For best flavor, add lemon and dill after turning off the heat to avoid bitterness.
