Cozy Maple Roasted Delicata Squash Rings

Tender delicata squash rings roasted with a maple glaze until caramelized and sticky. An easy, crowd-pleasing fall side dish that’s naturally vegan and gluten-free.

  • 2 medium delicata squash (about 1.5 lbs / 680g total)
  • 3 tablespoons pure maple syrup (60ml)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon kosher salt (5g)
  • ½ teaspoon freshly ground black pepper (1g)
  • ½ teaspoon ground cinnamon (1g, optional)
  • 45 fresh thyme sprigs (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Wash the delicata squash thoroughly and pat dry. Do not peel. Trim off the tip and stem end, then slice crosswise into ½-inch (1.25 cm) thick rings. Scoop out seeds and stringy pulp from the center of each ring.
  3. Place the squash rings in a large mixing bowl. Drizzle with olive oil, then sprinkle with kosher salt, black pepper, and cinnamon (if using). Toss gently to coat evenly.
  4. Arrange the seasoned rings in a single layer on the prepared baking sheet. Roast for 15 minutes, until the bottoms are lightly browned and the rings are starting to soften.
  5. Remove the baking sheet from the oven. Drizzle or brush the maple syrup evenly over the tops of the rings. If using fresh thyme, scatter the sprigs over the pan. Gently flip each ring and brush or drizzle the remaining syrup on the other side.
  6. Return the baking sheet to the oven and roast for another 10-12 minutes, until the rings are tender when pierced with a fork and the edges are caramelized and slightly charred.
  7. Remove from the oven and let the squash rings rest on the pan for 2 minutes. Transfer to a serving platter, discarding the thyme sprigs if used. Serve warm or at room temperature.

Notes

Add maple syrup halfway through roasting to prevent burning. For a less sweet version, reduce maple syrup to 2 tablespoons and add 1 tablespoon balsamic vinegar. For a savory twist, omit cinnamon and add smoked paprika and cayenne. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days; reheat in a 350°F oven or air fryer for best results.
