Cozy Marry Me Chicken Soup with Sun-Dried Tomatoes

  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 2 tablespoons olive oil (or oil from sun-dried tomatoes)
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 4 cups low-sodium chicken stock
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/4 cup fresh basil, chopped (for garnish)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken dry with paper towels and season both sides generously with salt and pepper.
  2. Heat 2 tablespoons of olive oil (or oil from the sun-dried tomatoes jar) in a Dutch oven over medium-high heat. Add the chicken and cook for 4-5 minutes per side, until golden brown. Transfer to a plate and set aside.
  3. Reduce heat to medium. Add the diced onion to the pot and cook for 3-4 minutes, until softened and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Stir in the chopped sun-dried tomatoes and cook for 2 minutes.
  5. Pour in the chicken stock and scrape up any browned bits from the bottom of the pot. Add the dried oregano, dried thyme, and red pepper flakes (if using). Stir to combine.
  6. Return the seared chicken to the pot. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 15-20 minutes, until the chicken is cooked through and tender.
  7. Remove the chicken from the pot and shred it into bite-sized pieces using two forks.
  8. Return the shredded chicken to the pot. Reduce heat to low and stir in the heavy cream and grated Parmesan cheese. Stir gently until the cheese is fully melted and the broth is smooth and creamy. Taste and adjust salt and pepper as needed.
  9. Ladle the soup into bowls and garnish with fresh basil and parsley. Serve hot.

Notes

For best flavor, use sun-dried tomatoes packed in oil. If using dry-packed, rehydrate in warm water for 15 minutes before using. Always add dairy over low heat to prevent curdling. The soup tastes even better the next day as flavors meld. To freeze, cool completely and store in freezer-safe containers for up to 3 months.
