  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup crumbled cotija cheese
  • 2 tablespoons lime juice, fresh squeezed
  • 12 chipotle peppers in adobo sauce, minced
  • 1 teaspoon adobo sauce
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/4 cup cotija cheese, for topping
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 teaspoon chili powder
  • 1 jalapeño, thinly sliced (optional)

Instructions

  1. Heat a large cast iron skillet over high heat for 2 minutes. Add 1 tablespoon olive oil or butter. Add frozen corn in an even layer and cook undisturbed for 3-4 minutes. Stir and cook another 3-4 minutes until charred. Transfer to a plate and let cool slightly.
  2. In a mixing bowl, combine softened cream cheese, mayonnaise, sour cream, minced chipotle peppers, adobo sauce, smoked paprika, garlic powder, and lime juice. Mix until completely smooth.
  3. Add charred corn to the creamy base and stir gently to coat. Fold in 1 cup crumbled cotija cheese. Taste and adjust seasoning as needed.
  4. Transfer mixture back to the skillet or an oven-safe dish. Bake at 350°F for 10-12 minutes until bubbly around the edges. Alternatively, microwave for 2-3 minutes, stirring halfway.
  5. Remove from oven and let rest 2 minutes. Sprinkle with reserved cotija cheese, chopped cilantro, and chili powder. Garnish with jalapeño slices if desired. Serve warm with tortilla chips.

Notes

For best results, let cream cheese soften at room temperature for 30 minutes. Char corn in batches if doubling the recipe. The dip can be made up to 2 days ahead and reheated. For a milder version, use half a chipotle pepper and skip extra adobo sauce.
