These no-bake granola bar bites with chocolate chips are a quick, wholesome snack that comes together on the stovetop in about 10 minutes. Made with oats, peanut butter, honey, and chocolate chips, they’re perfect for meal prep, kid-friendly, and endlessly customizable.

  • 2 cups (180g) rolled oats
  • 1/2 cup (130g) creamy peanut butter
  • 1/3 cup (110ml) honey
  • 1/2 cup (90g) semi-sweet chocolate chips
  • 2 tablespoons (28g) unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: 1/4 cup shredded coconut, 1/4 cup chopped almonds, 2 tablespoons flax seeds, 1/4 cup dried cranberries

Instructions

  1. Line an 8×8 inch baking dish with parchment paper, leaving overhang on two sides.
  2. In a large mixing bowl, combine rolled oats, chocolate chips, and any optional add-ins. Stir to distribute evenly.
  3. In a medium saucepan over low heat, combine peanut butter, honey, butter, and salt. Stir constantly until smooth and glossy, about 3-4 minutes.
  4. Remove from heat and stir in vanilla extract. Let cool for 1 minute.
  5. Pour the wet mixture over the dry ingredients and stir vigorously until every oat is coated and chocolate chips are evenly distributed.
  6. Transfer the mixture to the prepared dish. Place a second piece of parchment paper on top and press down firmly for 2 minutes, focusing on corners and edges.
  7. Refrigerate for at least 2 hours, or overnight for best results.
  8. Lift the bars out using the parchment overhang, place on a cutting board, and cut into squares or rectangles with a sharp serrated knife.

Notes

Don’t overheat the wet mixture or the bars will become hard. Use room temperature peanut butter for even melting. Press the mixture firmly into the pan to prevent crumbling. Chill for at least 2 hours before cutting. Store with parchment between layers to prevent sticking. For vegan version, substitute honey with maple syrup and butter with coconut oil. For nut-free, use sunflower seed butter or tahini.
