Cozy No-Churn Peach Bourbon Ice Cream

This no-churn peach bourbon ice cream is a creamy, boozy treat that requires no ice cream maker. Made with ripe peaches, heavy cream, sweetened condensed milk, and a splash of bourbon, it’s the perfect easy dessert for cozy nights in.

  • 2 cups heavy cream (cold)
  • 1 can (14 ounces) sweetened condensed milk
  • 23 ripe peaches (about 1½ cups, peeled and diced)
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup diced peaches (for swirl, about 1 large peach)
  • 2 tablespoons granulated sugar (for swirl)
  • 1 teaspoon lemon juice (for swirl)
  • 1 tablespoon bourbon (for swirl)

Instructions

  1. Bring a small pot of water to a boil. Score an ‘X’ on the bottom of each peach. Drop them into the boiling water for 30-45 seconds, then transfer to an ice bath. Peel and dice the peaches into small cubes (about ½-inch). Set aside 1 cup for the base and reserve the rest for the swirl.
  2. In a small saucepan, combine the reserved 1 cup diced peaches, 2 tablespoons sugar, 1 teaspoon lemon juice, and 1 tablespoon bourbon. Cook over medium heat, stirring occasionally, until the peaches soften and release their juices—about 5-7 minutes. Let cool completely.
  3. Pour the cold heavy cream into a large mixing bowl. Using an electric mixer, whip on medium-high speed until stiff peaks form.
  4. In a separate bowl, whisk together the sweetened condensed milk, 2 tablespoons bourbon, vanilla extract, and pinch of salt. Fold in the 1 cup of diced peaches (not the swirl mixture) gently.
  5. Take about a third of the whipped cream and fold it into the peach-condensed milk mixture. Then gently fold in the remaining whipped cream until just combined.
  6. Spoon about half of the ice cream base into a loaf pan. Dollop half of the cooled peach swirl on top. Use a knife or skewer to gently swirl it through. Repeat with the remaining base and swirl.
  7. Press a piece of plastic wrap directly onto the surface of the ice cream. Cover the pan with another layer of plastic wrap or a lid. Freeze for at least 6 hours, preferably overnight.

Notes

The bourbon helps keep the ice cream scoopable by lowering the freezing point. For a non-alcoholic version, substitute with 1 teaspoon bourbon extract or vanilla extract mixed with 2 tablespoons peach nectar. If using frozen peaches, thaw and drain well before using. The flavors deepen after 24 hours in the freezer.
