Creamy, naturally sweet overnight oats with mashed banana and rich peanut butter. A 5-minute prep that delivers a warm, comforting breakfast—perfect for busy mornings.

Ingredients

Scale
  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) milk (any kind)
  • 2 tablespoons (32g) creamy natural peanut butter
  • 1 medium very ripe banana
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • A tiny pinch of salt

Instructions

  1. Mash the very ripe banana with a fork in your jar or a small bowl until mostly smooth (a few lumps are fine).
  2. Add the milk, peanut butter, vanilla extract, and maple syrup or honey (if using) to the mashed banana. Stir until the peanut butter is mostly incorporated.
  3. Add the rolled oats, chia seeds (if using), and a tiny pinch of salt. Stir well until everything is combined, ensuring no dry pockets remain.
  4. Stir the mixture vigorously for about 30 seconds to evenly distribute the chia seeds and prevent clumps.
  5. Cover the jar or bowl with a lid or plastic wrap and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, or cinnamon if desired. Enjoy cold or microwave for 45-60 seconds for a warm breakfast.

Notes

Use a very ripe banana with brown spots for natural sweetness. Stir chia seeds thoroughly to avoid clumps. Don’t skip the salt—it balances flavors. Adjust milk in the morning if oats are too thick. Make a double batch for up to 5 days of breakfasts. For warm oats, microwave 45-60 seconds or heat on stovetop.
