Ingredients

Scale
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar (for rolling)
  • 1/4 cup crushed candy canes or peppermint candies (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, beat softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
  3. Beat in egg, vanilla extract, and peppermint extract until just combined. Scrape down sides of bowl.
  4. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed or folding with a spatula until just combined. Dough should be soft, slightly sticky, and dark brown. If too sticky, chill for 10 minutes.
  6. In a small bowl, whisk together powdered sugar and crushed candy canes.
  7. Using a cookie scoop or tablespoon, scoop about 1.5 tablespoons (25g) of dough and roll into a smooth ball.
  8. Roll dough ball in the powdered sugar and candy cane mixture until heavily coated.
  9. Place coated dough balls on prepared baking sheets, spacing 2 inches apart.
  10. Bake for 10-12 minutes. Cookies will look puffy and cracked; centers should be soft and slightly underdone.
  11. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.

Notes

Don’t overbake; cookies will look soft and puffy when done. For a fudgier cookie, bake 10 minutes; for firmer, bake 12. If dough is too sticky, chill 15-20 minutes. Use a cookie scoop for uniform size. Roll dough balls generously in coating for best crinkles. Room temperature ingredients ensure proper emulsification. Bake one sheet at a time in center of oven.
