These soft and chewy apple cider cookies are packed with intense apple flavor from reduced cider and coated in cinnamon sugar. Perfect for fall gatherings, this small-batch recipe makes just 12 cookies and is ready in under an hour.

  • 1/2 cup (113 g) unsalted butter, softened
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (50 g) light brown sugar, packed
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (180 g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • For the coating: 1/4 cup (50 g) granulated sugar mixed with 1 teaspoon ground cinnamon

Instructions

  1. Reduce the apple cider: Pour 1 cup of apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer, stirring occasionally, until reduced to about 1/4 cup (15-20 minutes). Set aside to cool.
  2. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  3. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (2-3 minutes with a hand mixer on medium speed). Scrape down the sides halfway through.
  4. Add the egg and vanilla extract, beating until well combined (about 30 seconds).
  5. Pour the cooled cider syrup into the butter mixture and beat on low speed until fully incorporated.
  6. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  7. Gradually add the dry ingredients to the wet mixture, mixing on low speed or stirring with a spatula until just combined. Do not overmix.
  8. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes (up to 2 days).
  9. Using a cookie scoop or tablespoon, portion the dough into 12 balls (about 1.5 tablespoons each). Place them on the prepared baking sheet, spacing 2 inches apart.
  10. Bake at 350°F (175°C) for 10-12 minutes, until edges are lightly golden and centers are just set.
  11. While the cookies bake, mix the coating sugar and cinnamon in a shallow bowl.
  12. Let the cookies cool on the baking sheet for 2 minutes. While still warm, roll each cookie in the cinnamon-sugar mixture until coated. Transfer to a cooling rack to finish cooling.

Notes

Chilling the dough is essential to prevent spreading. The cider reduction can be made up to a week ahead and stored in the fridge. For best results, roll cookies in the coating while still warm (about 2 minutes after baking).
