Perfectly portioned pecan pie bars with a buttery shortbread crust and gooey, nutty filling. Ideal for a quiet night in, these bars come together in under an hour with simple pantry ingredients.

Ingredients

Scale
  • 4 tablespoons unsalted butter, melted (for crust)
  • ½ cup all-purpose flour
  • 2 tablespoons granulated sugar
  • ⅛ teaspoon salt (for crust)
  • ¼ cup light corn syrup
  • ¼ cup packed brown sugar
  • 1 large egg yolk
  • 1 tablespoon unsalted butter, melted (for filling)
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon salt (for filling)
  • ½ cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line a 6×6-inch baking dish with parchment paper, leaving overhang on two sides.
  2. In a small bowl, combine melted butter (4 tbsp), flour, granulated sugar, and salt (⅛ tsp) for the crust. Stir until a soft dough forms.
  3. Press dough evenly into the bottom of the prepared dish. Bake for 12-15 minutes until lightly golden around edges.
  4. While crust bakes, whisk together corn syrup, brown sugar, egg yolk, melted butter (1 tbsp), vanilla, and salt (⅛ tsp) for the filling until smooth.
  5. Stir chopped pecans into the filling mixture until evenly coated.
  6. Pour filling over hot crust and spread pecans evenly. Bake for 18-22 minutes until edges are set and center is slightly jiggly.
  7. Cool completely in the pan on a wire rack (1-2 hours).
  8. Lift bars out using parchment overhang, cut in half, and serve.

Notes

Do not overbake the filling; it should be slightly jiggly in the center when removed. Cool completely before cutting for clean slices. For deeper flavor, toast pecans in a dry skillet for 2-3 minutes before chopping. Use room temperature egg yolk for smoother incorporation.
