Ingredients

Scale
  • 1 cup fresh cranberries (about 100g)
  • ½ cup granulated sugar (100g)
  • 1 cup water (240ml)
  • 1 (2-inch) piece fresh ginger, peeled and sliced into thin rounds (about 30g)
  • ½ cup fresh orange juice (120ml)
  • 1 (750ml) bottle prosecco, chilled (brut or extra dry)
  • 1 cup ginger ale or ginger beer, chilled (240ml)
  • Orange slices, for garnish
  • Extra fresh cranberries, for garnish
  • Fresh rosemary sprigs, for garnish (optional)

Instructions

  1. Make the cranberry-ginger syrup: In a medium saucepan, combine 1 cup fresh cranberries, ½ cup sugar, 1 cup water, and the sliced ginger. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat to low and simmer for 8-10 minutes until cranberries pop and soften.
  2. Strain the syrup: Place a fine-mesh strainer over a bowl or measuring cup. Pour the hot syrup through the strainer, pressing gently on the solids with the back of a spoon to extract all liquid. Discard solids. Let syrup cool to room temperature (about 20 minutes), then refrigerate until completely cold (at least 1 hour).
  3. Chill everything: Ensure the syrup, orange juice, ginger ale, and prosecco are all well chilled before mixing.
  4. Combine the punch: In a large pitcher or punch bowl, combine the chilled cranberry syrup, ½ cup fresh orange juice, and 1 cup chilled ginger ale or ginger beer. Stir gently.
  5. Add the prosecco: Just before serving, slowly pour in the entire bottle of chilled prosecco. Stir very gently to preserve bubbles.
  6. Garnish and serve: Add orange slices, a handful of fresh cranberries, and rosemary sprigs. Serve immediately in glasses filled with ice, or skip ice if using a chilled punch bowl.

Notes

Make the cranberry syrup up to a week ahead and store in the fridge. For best bubbles, add prosecco and ginger ale just before serving. To keep punch cold without dilution, freeze some of the cranberry syrup in ice cube trays and use those cubes. If you can’t find fresh cranberries, frozen work fine—add them directly to the saucepan without thawing. For a less sweet version, reduce sugar to ¼ cup and use a dry prosecco.
