These sparkling sugared cranberries with rosemary are a cozy holiday treat that delivers bakery-quality sparkle and flavor. With a crisp sugar shell and a burst of tart, juicy cranberry, they’re perfect for garnishing desserts, cocktails, or enjoying by the handful.

Ingredients

Scale
  • 12 ounces (340 grams) fresh or frozen cranberries
  • 2 cups (400 grams) granulated sugar, divided
  • 1/2 cup (120 ml) water
  • 2–3 sprigs fresh rosemary (4–6 inches each)

Instructions

  1. Rinse and pick over the cranberries: Place cranberries in a colander, rinse under cool water, and discard any soft or blemished berries. Pat dry gently and set aside.
  2. Make the rosemary simple syrup: In a medium saucepan, combine 1 cup sugar and 1/2 cup water. Add rosemary sprigs. Heat over medium, stirring until sugar dissolves (3-4 minutes). Bring to a gentle simmer and cook for 2 minutes to infuse.
  3. Blanch the cranberries: Remove rosemary sprigs from syrup. Add cranberries to hot syrup, stir gently, and cook for exactly 60 seconds. Remove from heat immediately.
  4. Steep and cool: Transfer cranberries and syrup to a large bowl. Let sit at room temperature for 15-20 minutes, stirring halfway through.
  5. Drain and dry: Pour cranberries into a fine-mesh strainer set over a bowl. Let drain for 5 minutes. Spread in a single layer on a parchment-lined baking sheet. Dry at room temperature for 1-2 hours until tacky.
  6. Roll in sugar: Place remaining 1 cup sugar in a shallow bowl. Working in small batches, toss dried cranberries in sugar until completely coated.
  7. Final drying: Transfer coated cranberries back to the baking sheet in a single layer. Let dry for another 1-2 hours at room temperature until sugar shell sets.

Notes

Don’t overcook the cranberries—60 seconds is key. Ensure cranberries are tacky but not wet before rolling in sugar to avoid a sticky mess. Save leftover rosemary syrup for cocktails or pancakes. For best results, make a day ahead to allow flavors to meld.
