This creamy crockpot cheddar broccoli soup is the ultimate dinner party hack—throw everything in a slow cooker and let it work its magic while you relax. It’s unbelievably creamy without heavy cream, thanks to a secret combination of evaporated milk and cream cheese.

Ingredients

Scale
  • 4 cups fresh broccoli florets (about 2 large heads)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken or vegetable broth
  • 1 can (12 ounces) evaporated milk
  • 4 ounces cream cheese, softened and cut into cubes
  • 3 cups freshly shredded sharp cheddar cheese
  • 2 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional garnishes: extra shredded cheddar, crispy bacon bits, chopped chives, sour cream

Instructions

  1. Sauté the aromatics: Melt 2 tablespoons butter in a large skillet over medium heat. Add diced onion and cook for about 3 minutes until translucent. Add minced garlic and cook for 30 seconds. Scrape into crockpot.
  2. Build the base: Sprinkle 3 tablespoons flour over the onions and garlic in the crockpot and stir to coat.
  3. Add broth and broccoli: Pour in 4 cups broth and add broccoli florets. Stir to combine.
  4. Slow cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours, until broccoli is tender.
  5. Blend until smooth: Use an immersion blender to blend the soup directly in the crockpot until completely smooth. (Alternatively, blend in batches in a regular blender.)
  6. Add creaminess: Stir in softened cream cheese cubes and evaporated milk until cream cheese is fully melted.
  7. Melt in cheese: Reduce crockpot to warm or turn off. Gradually add shredded cheddar, a handful at a time, stirring constantly until each handful is melted. Stir in Dijon mustard.
  8. Season and serve: Taste and adjust salt and pepper. Serve hot with desired garnishes.

Notes

Shred your own cheese for smooth melting. Sautéing aromatics builds flavor. For best texture, cook on low. Add cheese when soup is not boiling hot to prevent graininess. Soup can be kept on warm setting for up to 2 hours; stir occasionally. Leftovers keep in fridge for up to 5 days or freeze for up to 3 months.
