Crispy air fryer chicken thighs with a garlic Parmesan coating that started as a happy accident and became a go-to weeknight dinner. Ready in under 30 minutes with simple ingredients, these thighs are shatteringly crisp on the outside and juicy on the inside.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs total)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika (regular or smoked)
  • ¼ teaspoon dried thyme (optional)
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon melted butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your air fryer to 400°F (200°C). Most air fryers need about 3-5 minutes to preheat. If your air fryer doesn’t have a preheat function, just run it empty for 3 minutes.
  2. Pat the chicken thighs completely dry with paper towels. This is the most important step for crispy skin. Take the time to really blot them dry, including the underside.
  3. Season the chicken. In a small bowl, mix together the salt, pepper, garlic powder, onion powder, paprika, and dried thyme (if using). Drizzle the olive oil over the chicken thighs, then sprinkle the seasoning mixture evenly over both sides. Use your hands to rub it in—get under the skin a little if you can, but don’t tear it.
  4. Make the garlic Parmesan coating. In another small bowl, combine the grated Parmesan, melted butter, and minced garlic. Mix it into a paste. It should be thick but spreadable—if it seems too dry, add another teaspoon of melted butter. If it’s too wet, add a little more Parmesan.
  5. Apply the coating. Using your fingers or the back of a spoon, spread the Parmesan paste over the top of each chicken thigh. Don’t worry about being perfect—a little unevenness creates those craggy crispy bits that are the best part. Make sure you get some on the edges and sides, not just the center.
  6. Place the chicken in the air fryer basket. Arrange the thighs skin-side up in a single layer. Leave at least ½ inch of space between each piece—crowding traps steam and prevents crisping. If your air fryer is small, cook in two batches.
  7. Air fry at 400°F for 18-20 minutes. Don’t touch them for the first 12 minutes—let that coating set. After 12 minutes, carefully flip each thigh using tongs. The coating should be starting to brown. Cook for another 6-8 minutes, or until the internal temperature reaches 165°F when inserted into the thickest part of the meat (not touching the bone).
  8. Let them rest. When the timer goes off, transfer the chicken to a plate and let it rest for 5 minutes. This allows the juices to redistribute so every bite is moist and tender.
  9. Garnish and serve. Sprinkle with fresh parsley for a pop of color and freshness. Serve hot.

Notes

For best results, pat chicken completely dry before seasoning. Don’t overcrowd the air fryer basket—leave space between pieces for air circulation. Let the coating set for the first 12 minutes before flipping. Use a meat thermometer to ensure internal temperature reaches 165°F. For oven-baked version: preheat oven to 425°F, place chicken on a wire rack over a baking sheet, bake for 25-30 minutes. Leftovers can be stored in the refrigerator for up to 4 days and reheated in the air fryer at 375°F for 3-4 minutes. Freeze cooked chicken for up to 3 months.
