This easy candy corn popcorn bark is a quick, no-bake treat that converts even candy corn skeptics. With just five ingredients and 15 minutes, you get a salty-sweet, crunchy-chewy snack perfect for fall parties, classroom treats, or last-minute cravings.

Ingredients

Scale
  • 8 cups popped popcorn (about 1/2 cup unpopped kernels, or one standard bag of microwave popcorn, lightly salted)
  • 12 ounces white chocolate melting wafers or white chocolate chips
  • 1 cup candy corn (regular or autumn mix)
  • 1/2 cup salted peanuts or pretzel pieces (optional, but highly recommended)
  • 1 tablespoon coconut oil or vegetable shortening (optional, if using white chocolate chips)

Instructions

  1. Prep your popcorn (2 minutes): Pop your popcorn according to package directions or use an air popper. Spread it out on the baking sheet and pick out any unpopped kernels. Let the popcorn cool completely.
  2. Line your baking sheet (1 minute): Lay a piece of parchment paper on your baking sheet, letting the edges hang over slightly.
  3. Melt the white chocolate (3 minutes): Place the white chocolate wafers or chips in a microwave-safe bowl. Microwave in 30-second intervals at 50% power, stirring between each interval, until mostly melted and smooth. If using chips and they seem thick, stir in the coconut oil.
  4. Combine the ingredients (3 minutes): Pour the melted white chocolate over the cooled popcorn in your large mixing bowl. Add the candy corn and peanuts or pretzels if using. Gently fold everything together with a spatula until the popcorn is evenly coated.
  5. Spread and chill (5 minutes): Transfer the mixture to your prepared baking sheet. Spread it into an even layer, about 1/2 to 3/4 inch thick. Press down gently with the spatula. Sprinkle a few extra candy corns and peanuts on top. Place the baking sheet in the refrigerator for at least 15 minutes, or until the chocolate is completely set.
  6. Break into pieces (1 minute): Once the bark is firm, lift it out using the parchment paper. Break it into irregular pieces with your hands.

Notes

White chocolate is finicky—use a completely dry bowl and spatula to prevent seizing. Day-old popcorn works better than fresh. Don’t skip the chill time; 15 minutes in the fridge ensures clean breaks. For a nut-free version, replace peanuts with extra pretzel pieces or crispy rice cereal. Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
