These easy cranberry brie bites come together in just 20 minutes with simple ingredients like puff pastry, brie, and cranberry sauce. They’re the perfect crowd-pleasing appetizer for any gathering, with a flaky, creamy, and tangy flavor that disappears every time.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, rind removed and cut into 24 small cubes (about 1/2-inch each)
  • 1/3 cup whole berry cranberry sauce
  • 1 large egg, beaten
  • 1 tablespoon fresh rosemary, finely chopped (optional)
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly spray a 24-cup mini muffin tin with non-stick cooking spray or brush with melted butter.
  2. On a lightly floured surface, gently roll out the thawed puff pastry sheet to about 1/8-inch thickness. Cut the pastry into 24 equal squares, about 2 inches each.
  3. Gently press each square into a mini muffin cup, making sure the corners stick up slightly above the rim. If the pastry feels too warm, refrigerate for 5 minutes.
  4. Place one cube of brie into each pastry cup.
  5. Spoon about 1/2 teaspoon of cranberry sauce over each brie cube.
  6. Brush the exposed edges of the puff pastry with the beaten egg. Sprinkle a few rosemary pieces over the top of each bite, then finish with a tiny pinch of flaky sea salt.
  7. Bake for 12-14 minutes, until the pastry is puffed and golden brown and the brie is melted and bubbly.
  8. Let the bites cool in the pan for 2-3 minutes before serving. Use a small offset spatula or butter knife to gently lift them out of the pan. Serve warm.

Notes

Keep the pastry cold for best flakiness. Don’t skip the egg wash for a golden color. Remove the brie rind completely for smooth melting. Watch the oven closely as they can burn quickly. Assemble up to 4 hours ahead (minus egg wash) and refrigerate. Reheat in a 350°F oven for 5-7 minutes.
