These roasted delicata squash rings with maple butter are a quick and easy side dish that comes together in 20 minutes. With crispy edges, tender centers, and a sweet maple glaze, they’re perfect for weeknight dinners or holiday gatherings.

  • 2 medium delicata squash (about 2 pounds total)
  • 2 tablespoons avocado oil or olive oil
  • 1 teaspoon fine sea salt
  • 3 tablespoons unsalted butter
  • 2 tablespoons pure maple syrup
  • 45 sprigs fresh thyme (optional, or 1/2 teaspoon dried)
  • Flaky sea salt for finishing (optional)

Instructions

  1. Preheat your oven to 425°F (218°C). Place the rack in the middle position.
  2. Wash the delicata squash thoroughly, pat dry, and trim about 1/4 inch from both ends. Discard the ends.
  3. Slice the squash crosswise into 1/2-inch thick rings. Remove seeds from the center if desired.
  4. Place the squash rings in a large mixing bowl. Drizzle with 2 tablespoons of avocado oil and sprinkle with 1 teaspoon of fine sea salt. Toss to coat evenly.
  5. Line a large baking sheet with parchment paper. Arrange the squash rings in a single layer without overlapping.
  6. Roast for 10 minutes. Do not open the oven during this time.
  7. Remove the baking sheet from the oven. Flip each ring using tongs. Return to the oven and roast for another 8-10 minutes, until tender and deep golden brown.
  8. While the squash roasts, make the maple butter: In a small saucepan over low heat, combine 3 tablespoons of unsalted butter and 2 tablespoons of pure maple syrup. Stir frequently until melted and smooth, about 2-3 minutes. Remove from heat.
  9. Transfer the roasted squash rings to a serving platter. Brush or drizzle the maple butter over the warm rings. Sprinkle with fresh thyme leaves and flaky sea salt if using. Serve immediately.

Notes

For extra crispiness, switch the oven to broil for the last 1-2 minutes of cooking. Watch closely to avoid burning. The rings are best served immediately; edges soften within 10-15 minutes. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a 400°F oven for 5-7 minutes.
