These cranberry brie bites are ready in 5 minutes with just 5 simple ingredients. Creamy brie, tart cranberry sauce, and flaky crescent dough come together for the perfect party appetizer that always disappears fast.

Ingredients

Scale
  • 1 can (8 oz) refrigerated crescent roll dough
  • 4 oz brie cheese, rind removed and cut into 24 small cubes
  • 1/3 cup whole berry cranberry sauce
  • 2 tablespoons honey
  • Fresh thyme leaves for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a 24-cup mini muffin tin with non-stick cooking spray.
  2. Unroll the crescent roll dough on a clean cutting board. If using perforated sheets, press the seams together. Cut the dough into 24 equal squares (about 2 inches each).
  3. Press each square into a mini muffin cup, pressing gently so the dough comes up the sides slightly.
  4. Cut the cold brie into 24 small cubes, about 1/2 inch each.
  5. Place one brie cube into each dough cup. Top each with about 1/2 teaspoon of cranberry sauce.
  6. Bake for 10-12 minutes, until the crescent dough is golden brown and the brie is bubbly and melted.
  7. Let the bites cool in the pan for 2-3 minutes, then gently lift them out and transfer to a serving platter.
  8. While still warm, drizzle a tiny bit of honey over each bite and sprinkle with fresh thyme leaves. Serve immediately.

Notes

You can assemble these completely ahead of time—up to 24 hours in advance. Just cover the filled muffin tin with plastic wrap and refrigerate. When ready to serve, add 2-3 minutes to the baking time. For best results, keep brie cold until cutting. If you don’t have a mini muffin tin, shape the dough into small cups on a baking sheet. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in a 350°F oven for 5-7 minutes.
