Crispy, perfectly salted pumpkin seeds made in the air fryer in under 15 minutes. A simple, healthy snack that’s perfect for fall.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds (or raw, unsalted pepitas)
  • 1 tablespoon olive oil (or melted butter, coconut oil)
  • 1 teaspoon sea salt (or to taste)
  • Optional: 1/2 teaspoon garlic powder, smoked paprika, cayenne pepper, or cinnamon

Instructions

  1. Prepare the pumpkin seeds: Scoop seeds from pumpkin, rinse in a colander under cold water, removing stringy pulp. (Optional: soak in water for 5 minutes to loosen pulp.)
  2. Dry the seeds thoroughly: Pat dry with a clean kitchen towel or paper towels. Let air-dry for 10-15 minutes if possible.
  3. Preheat air fryer to 350°F (175°C) for 3 minutes.
  4. In a medium bowl, toss dried seeds with olive oil until coated. Add sea salt and any optional seasonings; toss again.
  5. Spread seeds in a single layer in the air fryer basket. Do not overcrowd; cook in batches if needed.
  6. Air fry at 350°F for 6 minutes. Shake basket or stir seeds.
  7. Continue air frying for 4-6 more minutes, checking at 4 minutes, until golden brown and nutty-smelling.
  8. Transfer seeds to a plate or baking sheet in a single layer. Cool completely (at least 10 minutes) – they will crisp as they cool.
  9. Serve immediately or store in an airtight container at room temperature for up to 2 weeks.

Notes

For best results, dry seeds thoroughly before cooking. Shake basket halfway through. Watch timing closely as air fryers vary. Seeds continue to crisp as they cool. For oil-free version, use water or egg white to help salt adhere; cook at 325°F for 10-12 minutes.
