Ingredients

Scale
  • 1 (8-ounce) wheel of brie cheese
  • 1/3 cup whole berry cranberry sauce
  • 1/4 cup chopped walnuts
  • 2 tablespoons honey
  • 1 tablespoon brown sugar (optional)
  • Fresh rosemary sprigs for garnish
  • Crackers, sliced baguette, or apple slices for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Take the brie out of the refrigerator and let it sit for 20 minutes.
  3. While the brie warms up, toast the walnuts in a small dry pan over medium heat for 2-3 minutes until fragrant and lightly golden. Set aside to cool.
  4. Using a sharp knife, carefully score the top rind of the brie in a crosshatch pattern, making shallow cuts about 1/2 inch apart.
  5. Place the brie in a small baking dish or oven-safe skillet (optionally lined with parchment paper).
  6. Spoon the cranberry sauce evenly over the top of the brie.
  7. Sprinkle the toasted walnuts over the cranberry layer.
  8. Drizzle 1 1/2 tablespoons of honey over everything, saving the remaining half tablespoon for after baking.
  9. Sprinkle the brown sugar on top (optional).
  10. Bake for 12-15 minutes until the brie is soft and slightly puffed up, with bubbly edges.
  11. Let it rest for 2-3 minutes.
  12. Transfer to a serving platter.
  13. Drizzle with the remaining honey and garnish with fresh rosemary sprigs.
  14. Serve immediately with crackers, baguette slices, or apple slices.

Notes

Let the brie sit at room temperature for 20 minutes before baking for even heating. Don’t overbake; start checking at 12 minutes. Toast the walnuts for best flavor. Use a sturdy cracker to hold the gooey cheese. Can be assembled up to a day in advance and refrigerated; add 2-3 minutes to baking time if starting from cold.
