This creamy, tangy, and slightly spicy buffalo chicken dip is budget-friendly, kid-approved, and incredibly easy to make. Perfect for game days, after-school snacks, or any night when dinner needs to feel like a party.

Ingredients

Scale
  • 2 cups cooked chicken, shredded (one small rotisserie chicken)
  • 8 ounces cream cheese, softened
  • ½ cup ranch dressing
  • ½ cup buffalo sauce (such as Frank’s RedHot)
  • 1 cup cheddar cheese, shredded
  • ½ cup mozzarella cheese, shredded
  • ¼ cup plain Greek yogurt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Shred the chicken. If using a rotisserie chicken, pull the meat off the bones while still warm. Discard skin and bones. You should have about 2 cups of shredded meat.
  2. Soften the cream cheese. Remove from fridge 30 minutes before starting, or microwave for 15-20 seconds on 50% power until soft but not melted.
  3. Combine the creamy base. In a slow cooker, add softened cream cheese, ranch dressing, buffalo sauce, and Greek yogurt. Stir until mostly combined.
  4. Add the chicken and seasonings. Toss in shredded chicken, garlic powder, onion powder, salt, and pepper. Stir together. Taste and adjust heat as desired.
  5. Add the cheeses. Reserve about ¼ cup of cheddar for the top. Stir in the rest of the cheddar and all the mozzarella until cheese starts to melt.
  6. Cook on low. Cover and cook on low for 2 hours. After 1 hour, give it a good stir.
  7. Top and finish. Sprinkle reserved cheddar on top during the last 15 minutes. Let it melt until bubbly and golden.
  8. Serve warm. Switch slow cooker to warm setting. Serve with tortilla chips, celery sticks, carrot chips, or crusty bread.

Notes

Don’t overcook the dip; 2 hours on low is ideal. Shred your own cheese for smoother melting. Taste buffalo sauce before adding all of it, as heat levels vary. Room temperature ingredients blend better. For a milder version, use only ¼ cup buffalo sauce and add extra ranch. Leftovers keep in the fridge for up to 4 days and reheat well.
