Ingredients

Scale
  • 16 ounces cream cheese, softened to room temperature
  • 1 cup ranch dressing (or blue cheese dressing)
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled blue cheese (optional)
  • 2 cups cooked, shredded chicken (about 2 large chicken breasts or 3 cups rotisserie chicken)
  • 1 tablespoon butter
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • Celery sticks, for serving
  • Carrot sticks, for serving
  • Tortilla chips, for serving
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Prepare the chicken: If using rotisserie chicken, remove skin and shred meat with two forks. If cooking your own, season two chicken breasts with salt, pepper, and garlic powder, then cook in a skillet over medium heat with 1 tablespoon butter for 6-8 minutes per side until cooked through. Let rest 5 minutes, then shred while still warm.
  2. Soften the cream cheese: Let cream cheese sit at room temperature, or microwave in 10-second intervals until soft but not melted.
  3. Mix the base: In a large bowl, combine softened cream cheese, ranch dressing, and buffalo wing sauce. Stir until smooth. Add garlic powder and onion powder, and mix again. Adjust heat if desired.
  4. Combine everything: Add shredded chicken to the cream cheese mixture and stir until coated. Fold in shredded mozzarella and half of the crumbled blue cheese (if using). If too thick, add a splash of milk or extra ranch dressing.
  5. Cook the dip: Transfer mixture to a large skillet and cook over medium-low heat, stirring frequently, for 10-12 minutes until hot and bubbly. Alternatively, cook in a slow cooker on low for 2 hours or high for 1 hour, stirring halfway.
  6. Finish and serve: Sprinkle remaining blue cheese crumbles on top (if using) and garnish with fresh parsley. Serve immediately with celery sticks, carrot sticks, and tortilla chips. If using a slow cooker, switch to ‘warm’ setting.

Notes

For best results, use full-fat cream cheese and shred chicken while warm. If dip becomes greasy, stir in 1 teaspoon cornstarch mixed with 1 tablespoon cold water. Dip can be made ahead and refrigerated for up to 24 hours; add 5-10 minutes to cooking time. Leftovers keep in the fridge for up to 4 days and freeze for up to 3 months.
