This quick and easy buffalo chicken dip is made with cream cheese, ranch dressing, and shredded chicken, baked until bubbly and golden. Perfect for game days, parties, or weeknight cravings.

  • 8 ounces cream cheese, softened
  • 1/2 cup ranch dressing
  • 1/3 cup buffalo sauce (such as Frank’s RedHot)
  • 2 cups cooked, shredded chicken (canned, rotisserie, or leftover)
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons chopped green onions (optional, for garnish)
  • 1 tablespoon crumbled blue cheese (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a medium mixing bowl, combine softened cream cheese, ranch dressing, and buffalo sauce. Stir until smooth.
  3. Add shredded chicken and stir until evenly coated.
  4. Fold in 3/4 cup of the shredded cheddar and all of the mozzarella. Reserve remaining 1/4 cup cheddar for topping.
  5. Transfer mixture to an 8×8-inch baking dish and spread into an even layer.
  6. Sprinkle remaining 1/4 cup cheddar cheese on top. Add blue cheese crumbles if using.
  7. Bake for 20-25 minutes, until hot and bubbly and top is lightly golden. For extra browning, broil for 1-2 minutes at the end.
  8. Let rest for 5 minutes before serving.
  9. Garnish with chopped green onions and serve warm with chips, celery sticks, or crackers.

Notes

For best texture, ensure cream cheese is at room temperature. Canned chicken works well; drain thoroughly. Dip can be assembled ahead and refrigerated; add 10-15 minutes to baking time if starting cold. For a slow cooker version, cook on low for 2 hours.
