This sweet-salty popcorn bark combines crispy popcorn, creamy white chocolate, chewy candy corn, and crunchy pretzels for an irresistible fall treat. Born from a kitchen disaster, it’s now a signature party snack that comes together in just 15 minutes of active work.

Ingredients

Scale
  • 8 cups popped popcorn (about 1/2 cup unpopped kernels or one standard bag of microwave popcorn, plain or lightly salted)
  • 12 ounces white chocolate chips or melting wafers
  • 1 cup candy corn
  • 1/2 cup salted pretzel twists or mini pretzels, roughly broken
  • 1/4 cup roasted salted peanuts (optional)
  • 1/4 teaspoon flaky sea salt (like Maldon) or kosher salt
  • 1/2 cup dried cranberries or chopped dried apricots (optional)
  • Non-stick cooking spray or coconut oil for greasing

Instructions

  1. Line a rimmed baking sheet with parchment paper or a silicone baking mat. Lightly spray with non-stick cooking spray.
  2. Pop the popcorn to yield 8 cups. Spread on the prepared baking sheet in a single layer, remove any unpopped kernels, and let cool completely.
  3. Melt the white chocolate chips in a medium microwave-safe bowl at 50% power in 30-second intervals, stirring thoroughly between each, until smooth (about 2-3 minutes total).
  4. Pour the melted white chocolate over the cooled popcorn on the baking sheet. Gently fold with a rubber spatula until every kernel is coated.
  5. Sprinkle the candy corn, broken pretzels, peanuts (if using), and dried fruit (if using) evenly over the coated popcorn. Gently press toppings into the white chocolate.
  6. Use an offset spatula or the back of a spoon to spread the mixture into an even layer about 1/2 to 3/4 inch thick. Sprinkle flaky salt evenly over the top while the white chocolate is still wet.
  7. Refrigerate the baking sheet for at least 30 minutes, or until the white chocolate is completely firm and set. (Alternatively, freeze for 15 minutes.)
  8. Once set, lift the parchment paper off the baking sheet. Break the bark into irregular pieces with your hands.
  9. Serve immediately or store in an airtight container at room temperature for up to 5 days. If your kitchen is warm, store in the refrigerator.

Notes

Let popcorn cool completely before adding white chocolate to prevent seizing. Use 50% power when melting white chocolate to avoid burning. For best results, make a day ahead to allow flavors to meld. Do not freeze. For a nut-free version, skip peanuts and add extra pretzels or crispy rice cereal.
