This Easy Christmas Tree Charcuterie Board is a stunning, stress-free holiday appetizer that comes together in about 20 minutes. With simple ingredients like salami, brie, and fresh spinach, it’s a crowd-pleasing centerpiece that looks like you spent hours on it.

Ingredients

Scale
  • Large wooden cutting board or serving platter (at least 12×16 inches)
  • 3–4 long fresh rosemary sprigs
  • 2 cups fresh spinach leaves, washed and dried
  • 8–10 slices Genoa salami
  • 4–6 slices prosciutto, thinly shaved
  • 10–12 slices pepperoni (optional)
  • 1 small wheel brie cheese (about 8 oz)
  • 4 oz sharp cheddar cheese, cut into small cubes or stars
  • 4 oz cream cheese, softened (optional)
  • 1 cup cherry tomatoes, halved or whole
  • 1/2 cup pomegranate seeds
  • 1/2 cup pitted green olives (preferably Castelvetrano)
  • 1/4 cup dried cranberries
  • Fresh parsley or thyme (optional, for garnish)
  • 1 box crackers (neutral water cracker or rosemary-infused)
  • 1 small baguette, sliced into 1/2-inch rounds and lightly toasted
  • Handful of pretzel sticks (optional, for tree trunk)

Instructions

  1. Prep Your Board and Base (5 minutes): Place your large cutting board or platter on a flat surface. Arrange the fresh rosemary sprigs in a vertical line down the center to form the ‘trunk’ of the tree. Create a triangular outline with the fresh spinach leaves, starting narrow at the top and widening toward the base.
  2. Layer the Meats (5 minutes): Fold salami slices into small roses or roll them into tight cylinders. Place them along the edges of the spinach triangle, spacing them out like ornaments. Drape prosciutto slices in loose folds, tucking them between the salami. Scatter pepperoni in the middle if using.
  3. Add the Cheese (5 minutes): Place the brie wheel near the bottom center of the tree. Cut sharp cheddar into small stars or cubes and scatter around the edges. If using cream cheese, spoon it into a zip-top bag, snip a tiny corner, and pipe a star shape at the very top of the tree as a topper.
  4. Decorate with Ornaments (5 minutes): Place cherry tomatoes (halved side down) in clusters around the tree. Dot pomegranate seeds everywhere. Tuck green olives into empty spaces. Sprinkle dried cranberries like tinsel to create an abundant, festive look.
  5. Finish with Dippers (5 minutes): Arrange crackers and baguette slices around the base of the tree, fanning them out. Place pretzel sticks vertically near the trunk for added texture. Garnish with fresh parsley or thyme if desired.
  6. Serve Immediately or Chill (Optional): Serve at room temperature. If making ahead, cover loosely with plastic wrap and refrigerate for up to 2 hours. Remove 15 minutes before serving to let cheese soften.

Notes

For best results, avoid placing wet ingredients directly on crackers to prevent sogginess. Use the ‘rule of three’ for color balance: green, red, and white/cream. The board can be assembled up to 2 hours ahead; prep ingredients in the morning for quick assembly. If salami roses unroll, secure with a toothpick. For a vegetarian version, double the cheese and add marinated artichoke hearts or roasted red peppers.
